  • 1 pound leeks, chopped
  • 3 potatoes, diced
  • 1 zucchini
  • 2 stalks celery
  • 2 garlic cloves, chopped
  • Olive Oil
  • 3 Tablespoons beveri Fine Milled, Golden Flaxseed

Healthy Potato Leek Soup with Flax Recipe

  1. Coat the bottom of your soup pot with olive oil over medium heat
  2. Add potatoes and cook 5 minutes
  3. Add leeks, garlic, zucchini, and celery and cook 10 minutes
  4. Add hot water to cover the vegetables, simmer 20 minutes or until vegetables are tender
  5. Remove from heat
  6. Using a stick or immersion blender, puree the soup to a smooth consistency
  7. Add flaxseed
  8. Salt and pepper to taste
